Tried a new paleo recipe from PaleoMG today: chocolate and coffee muffins. The super protein sausage casserole is tasty, but I was in the mood for something sweeter. They were actually quite simple to make, and the batter is not to runny as you’d get with a gluten-free cake/muffin recipe. If you try the recipe (http://paleomg.com/paleo-coffee-cocoa-muffins/), add the extra 2 eggs. It makes about 2 dozens in a standard muffin tin/silicone. Both the Mrs and I agree on the tastiness after “testing” one. 🙂
I also did port-braised beef, but that’s not paleo, with the port and butter. Anyone ever tried making a roux with paleo-approved fat and flour? Good results?
